Alternative Protein Sources in Nutrition and Menus
By Chef Ahmet Özdemir
Alternative proteins include legumes, soy products, nuts, seeds, fungi, algae, fermentation-derived ingredients and emerging cultivated technologies. They can diversify menus and respond to environmental, dietary and supply-chain priorities.
Menu planning principles
Protein quantity is not the only consideration. Amino acid balance, digestibility, allergens, sodium, processing level and overall meal composition matter. Legumes and grains can form satisfying dishes when texture, seasoning and cooking technique are treated seriously.
Operational considerations
Restaurants should test guest acceptance, supplier reliability, storage, preparation and cost. Plant-based options should be designed as complete dishes rather than weak substitutions. Menu language must be accurate and cross-contact procedures clear.
Alternative proteins are useful when they add genuine choice. They should be evaluated through nutrition evidence, culinary quality and operational reality rather than trend claims alone.
