How to build the concept
Start with the guest profile and purpose of the event. Choose a theme that the kitchen can represent credibly, then create a limited selection of dishes with distinct flavors and cooking methods. Ingredient availability, equipment, preparation time and service flow must be evaluated before the menu is announced.
A themed menu may be served as a set menu, tasting menu, buffet or reception. Whichever format is chosen, vegetarian options, allergens, portion size and beverage pairing should be planned from the beginning.
