Hans Dernschwam’s Travel Account and Ottoman Food Culture

By Chef Ahmet Özdemir

Hans Dernschwam traveled through Ottoman lands in the sixteenth century and recorded observations about cities, people, markets and everyday life. His diary contains details that can help researchers examine the material culture of the period, including food supply, hospitality and urban organization.

A source that requires critical reading

Dernschwam wrote as a foreign observer with strong personal and cultural judgments. Some descriptions provide useful information, while others reveal prejudice or limited understanding. His work should therefore be compared with Ottoman records and other contemporary sources rather than accepted literally.

Food, markets and daily life

Travel accounts of this period often describe bread, grains, meat, fruit, wine, sherbets, roadside accommodation and marketplace activity. Such observations help explain how travelers obtained food, how cities supplied residents and how local hospitality appeared to outsiders.

The value of the diary lies not only in individual dishes but also in its description of social space. Markets, caravan routes and household customs formed part of the food system. These details can inform culinary history when geography, date and the observer’s position are clearly considered.

For modern culinary research, the correct approach is to separate direct observation from interpretation. Historical material can enrich a restaurant or cultural project, but it must be communicated accurately. My consulting and research work applies this principle when connecting historical knowledge with contemporary gastronomy.
