Molecular Gastronomy in Professional Kitchens

Molecular gastronomy studies the physical and chemical changes that occur during cooking. In restaurants, the term is often used for techniques such as gels, foams, controlled emulsions, spherification and low-temperature cooking.

Technique is not the concept

These methods can change texture and presentation, but they should support flavor rather than become a demonstration without purpose. Accurate measurement, food-grade ingredients and staff training are essential.

Operational requirements

Professional kitchens must define recipes, holding times, equipment and food safety controls. Some preparations are sensitive to temperature and service delay. The cost of specialized ingredients and labor should also be considered.

Molecular techniques are useful tools when they improve the guest experience. They should not replace product quality, seasoning or culinary identity.
